It’s so easy to make and even easier to truly make it your own with a few simple baking hacks. We love replacing the eggs with applesauce, pumpkin, or mashed banana to add some extra flavor! Baked Oatmeal Recipe

Ingredients

  • 3 cups oatmeal
  • 1 cup water or almond milk
  • 1/2 cup coconut oil
  • 1/3 cup sugar
  • 2 tsp baking powder
  • 2 eggs (OR 1/2 cup applesauce, pumpkin purée, or mashed banana)
  • 1 tsp cinnamon (optional)
  • 1/4 tsp nutmeg (optional)
  • 1/2 cup chopped nuts (optional)

Instructions

Preheat oven to 350 degrees. Mix all ingredients in a large bowl and spread into a lightly greased 8×8 baking pan. Bake at 350 degrees for 30 minutes. We normally enjoy it warm, but it’s delicious cold, too!
